The Apulian gastronomy is the protagonist of Masseria Casamassima, a farmhouse in Ostuni which produces olive oil and also vegetables for internal use. The kitchen of Masseria Casamassima prepares dishes in line with tradition, but also proposes new recipes to highlight local food. The term 'Masseria' means a 'set of houses/things' (mas = mass + er= house) having independent functions. An Apulian Masseria produced all the necessary for the sustenance of its workers and inhabitants: this construction was a kind of shelter against the attacks of the Saracens or brigands and the souls of peasants working there found relief in the internal church.
